Hello! Welcome to The Diamond Cookbook Blog. The Diamond Mountain is an iconic geological feature that can be seen from my house. It is loved and explored by our entire family in different ways. It brings us comfort in nature in the same way that certain foods comfort us and make us feel at home.
A little bit about my family: I’m married to an amazing man who graciously eats whatever experiment I put in front of him (the defeats and the victories). He works hard, forgives quickly, and is an avid outdoor enthusiast. Together we have three children. Our daughter is 20 and our sons are 15 and 6 years old. They have distinct and positive relationships with food that show in each individual personality. We are an unschooling family and that has allowed these relationships and tastes to grow and change in ways that are comfortable to them. I have fun watching them develop kitchen skills and learn to try new things with joy.
I grew up loving to cook, loving food of all kinds, and mostly loving desserts. As an American, living on Ireland’s west coast for over twenty years one of the first things I had to reconcile with was that I had left the land of convenience for an extremely rural and inconvenient setting. The nearest fast food restaurant was an hour away. If I wanted to eat something, I had to make it myself. I have been on a lifelong journey of food that saw me discover the decadence of the perfect cheesecake as a teenager, moving country and figuring out how to cook with different foods in a different culture in my early twenties, diving into vegetarianism for over a decade, and then full on into plant based veganism. Along the way I have created, chopped, changed, revamped, and played with recipes until I have found many tried and true beauties that deserve to be shared. These are all healthy recipes and are to be enjoyed without the guilt. I hope they inspire you to find ways of being more creative and bringing fun into your cooking. I’m a true believer that the energy you bring to the kitchen goes into the food that you create. Bring Joy! Be Joy! Enjoy!
Postscript: Having grown up cooking in America, I embraced the standard American measurement system of cups, ounces, and all that jazz. However, I did need to relearn how to think about recipes once I moved to Ireland and begrudgingly began using the metric system. Now I find the metric system far more accurate and am a true convert. I will be using both systems of measurement in these recipes because it will be more accessible to all users and stands as a representation of my journey.
