For the month of June we have a bonus GUEST recipe!! My daughter Róisín has created this cookie and I am BLOWN AWAY. It is so incredibly easy and there are absolutely zero questionable ingredients.

I need to include this into the blog for two very good reasons:
Reason one: She brought the idea to me and I told her point blank it would not work... people, I have never been more wrong. Such is her spirit, she was not deterred and when I was out of the house she took her idea, put it to work, and created something magical. My apology was immediate.
Reason two: This is the nicest, healthiest, most fun breakfast cookie I have ever tasted. Also, for any other hikers out there, this is the best thing you can take with you on your travels. These cookies are not crumbly, are full of protein, contain natural sugars, and will keep you free from any hunger pains. This is a meal, hands down.
The Ultimate Healthy Breakfast Cookie
Makes 12 cookies
-Vegan
-Sugar Free
-Wheat Free
-Gluten Free
Preheat the oven to 180 Celsius (350 Fahrenheit)
4 ripe bananas
200 grams (2 cups) gluten free oats
4 Tbsp peanut butter (try to use a brand that has peanuts as its only ingredient)
1/2 tsp salt
2 Tbsp cacao nibs
1 heaped Tbsp protein powder of your choice
1 tsp vanilla extract
1/2 tsp cinnamon
(Feel free to add any other nuts, seeds, or dried fruits you would like)
Prepare two baking sheets with greaseproof paper (You can reuse the paper several times before needing to throw it away). In a large bowl, mash the banana, then mix in all other ingredients. Drop by large spoonfuls onto the baking sheets. Bake for 15 minutes. Put on a wire rack to cool. Once cooled enough to handle, take a bite and love yourself. This is a gift from the heavens.
