The sun has finally decided to show itself here in the west of Ireland and it is a very welcome sight. As it's almost St. Patrick's Day, the wee lad and I went out on a hunt for lucky shamrocks. It was refreshing to blow away the winter cobwebs and get our legs climbing around the landscape in search of spring. This time of year is when I start craving more fresh foods, and a green smoothie is a great boost of nutrients for adults and kids alike. This smoothie may look healthy but it doesn't taste healthy at all. It's like a sweet, creamy, fresh, tangy burst of spring. Don't let the taste fool you! This Green Smoothie is packed full of fiber, antioxidants, magnesium (which is an anti-inflammatory), vitamins A, C and E, iron, calcium, zinc, and so much more. Jump in and raise your energy levels because spring is here!
Green Smoothie
One large handful of spinach
20 grams (1/4 cup) walnuts or pecans
1 Tbsp pumpkin seeds
1 tsp hemp seeds
1 tsp sunflower seeds
1/2 inch fresh ginger
1/2 inch fresh ginger
1/2 banana (use a more ripe banana for a sweeter smoothie and a more green banana for a less sweet smoothie)
1 kiwi
5 frozen strawberries
400 ml (1 3/4 cup) unsweetened plant milk
(optional) maple syrup to taste
(optional) small squeeze of lime
Add all ingredients to a blender, smoothie maker, or similar, and blitz until smooth.
