April 2020: Vegan Banana Muffins

I am forever an optimist when it comes to buying bananas. I'm just sure we will eat all of them, but when the last few stragglers get past their prime and are no longer appetizing, I'm left with the uncomfortable possibility of food waste. My answer is banana bread. Not just any banana bread, but my grandmother's recipe. It's not that her recipe is super intricate and fancy, in fact it's simple, easy, no bells or whistles. It's just that hers is the best. I have been making it for decades and decided to veganize it and lower the sugar significantly. The muffin version of the bread is so convenient to have on hand. They are perfect for picnics, a family get together, or for the kids to grab and go on their way outside to play. They are a comforting snack that is healthy, easy to throw together, and very tasty.



Vegan Banana Muffins
-Refined Sugar Free
-Wheat free


100 grams (1/2 cup) vegan butter
70 grams (1/2 cup) coconut sugar
2 flax eggs *
140 grams (1 cup) wholemeal spelt flour
100 grams (3/4 cup) white spelt flour **
1 tsp baking soda

3 very ripe bananas, crushed with a fork
1 handful of dried fruit or chopped nuts of choice (optional)

*1 Tbsp ground flaxseeds mixed with 3 Tbsp water makes one flax egg. Mix together and leave to sit and congeal for 10 minutes. You can buy already milled flaxseeds, but I highly recommend grinding your own in a coffee grinder. That way you are able to get them into a fine powder which makes a much better flax egg consistency and a much lighter finished product.

**You can use all wholemeal flour if you want, the texture will be denser but the flavor will still be amazing.


-Preheat oven to 180 celcius (350 fahrenheit).
-In a mixer, cream together the butter and sugar for several minutes until very light and fluffy. 

-Add flax eggs, flour, baking soda and crushed bananas. Mixing between each addition.
-Line the muffin tins and evenly divide the mixture between them. 
-Bake in the oven for 20-25 minutes or until a knife/toothpick inserted into the center comes out clean.
-To make a loaf of banana bread instead of muffins, line a loaf pan and bake for 40-45 minutes or until a knife/toothpick inserted into the center comes out clean.


Makes 12 muffins or 1 loaf.
