January 2020 Bonus: Berry & Chia Seed Jam


Berry & Chia Seed Jam
-vegan
-refined sugar free

450 grams (3 cups) frozen berries (cherry, blueberry, and raspberry is my favourite mix but be creative and find your own special flavors)
3 Tbsp maple syrup
45 grams (1/4 cup) chia seeds
1 tsp vanilla extract

In a medium sized saucepan, bring the berries and maple syrup to a low simmer and stir. You can mash the fruit or keep it whole depending on your own texture preference. Add in the chia seeds and simmer lightly for a few minutes until it reaches your desired consistency. Take the jam off the heat and leave it to thicken as it cools. Store in jars in the fridge for up to 2 weeks.
