These Strawberry Dreamsicles are so fun to have waiting in the freezer for a hot, summer afternoon when ice cream is the most satisfying treat. I also love to whip this up after dinner, when the family are lazily scattered around the house. I deliver little individual bowls to surprise them. The beauty of this recipe is that it takes about three minutes to make, and less time to clean up, yet the finished product is good enough to be served to royalty. This is the most delicious ice cream and the flavor possibilities are endless. You can swap out any frozen fruit you like. You can adjust the sweetness/tartness levels to suit your palette. You can add an endless array of toppings. One of my favorite toppings is Emma's Granola which I posted in June. I cannot overstate how easy and divine this recipe is. I promise you will love it!
Strawberry Dreamsicles
-Vegan
-Plant Based
-Refined Sugar Free
-Raw
-Gluten Free
-Oil Free
What you will need:
Food processor or blender
Popsicle Molds (optional)
Ingredients:
500g (2 cups) plain, unsweetened, non dairy yogurt
350g (3 cups or 20 large) frozen strawberries
2 Tbsp liquid sweetener of choice (maple syrup, agave, etc.)
1 tsp lemon juice
Instructions:
-You will want to get all the ingredients measured out and ready to go.
-Keep the strawberries in the freezer until you need them.
-You will need to work quickly because this melts.
-Put all ingredients into a food processor, adding the strawberries last. Blitz until well combined.
-Spoon into popsicle molds and pop into the freezer to harden.
-Alternatively, you can make this right when you want to eat it. Spoon it into individual bowls, add any fun toppings you like, eat immediately like a soft serve ice cream.
