I know my recipes usually have a long list of vitamins and minerals that make our bodies happy and satisfied. This recipe is no different. Yes, they are delicious cookies, simple to make, bake quickly, and are a hit at any holiday party. However, they pack a punch full of all the good stuff. For instance, coconut sugar single handedly can help prevent high cholesterol, provide dietary fiber, balance your blood sugar, and keep your gut healthy!! Cayenne pepper can boost your metabolism, reduce hunger, and lower blood pressure. Last but definitely not least is cacao. Also known as the King of Antioxidants. I have said this before, but it bears repeating -- Cacao has 40 times more antioxidants than blueberries! It is also a fabulous source of iron, magnesium, calcium, and is a very effective antidepressant. All I can say is, "more Chocolate Chili Cookies please!!" Chocolate Chili Cookies

-refined sugar free
-dairy free
Ingredients:
Topping (optional):
1/4 cup coconut sugar
1 tsp ground cinnamon
Cookies:
125g (1/2 cup) applesauce (or 120ml, 1/2 cup vegetable oil)
**Please, read the instructions below. You will get different outcomes depending on whether you choose the oil or applesauce option.**
100g (3/4 cup) coconut palm sugar
70g (1/4 cup) maple syrup
45ml (3 Tbsp) non-dairy milk
1 tsp vanilla extract
230g (1 2/3 cups) white or wholemeal spelt flour
40g (1/2 cup) cacao powder
1 tsp baking soda
1/2 tsp salt
1/4-1/2 ground cayenne pepper (or to taste)
1/2 tsp cinnamon
Instructions:
Preheat the oven to 180 C (350 F).
Line two baking trays with greaseproof or parchment paper.
Mix the topping ingredients together in a small bowl and set aside.
In a large bowl whisk together the applesauce (or oil), coconut sugar, maple syrup, non-dairy milk, and vanilla extract. Mix very well.
Using a wooden spoon, stir in each of the remaining ingredients one at a time. Mix until a dough is formed.
**The difference between choosing oil or applesauce for the cookies**
-If you have used oil instead of applesauce, you will be able to now roll the dough into small balls, flatten slightly in your hands, dip into the cinnamon and sugar topping and place on the baking sheets two inches apart. They will spread out and crack on the top as is shown in the photo.
-If you have chosen to use applesauce instead of oil, the dough will be too sticky to roll into balls. You will need to use a spoon to scoop the dough onto the baking trays two inches apart. You may sprinkle the cinnamon and sugar topping onto the cookies while they are on the trays. The cookies will spread but they won't flatten out and crack on the top. They will puff up and be a more cake-like consistency.
Both options are equally delicious!!
Bake in a preheated oven for 10-12 minutes.
Let the cookies cool for a few minutes while still on the baking tray, then allow them to cool fully on a cooling rack.
