It's a new year! We have all been through a lot of worldly stress for quite a while. I think it's time to start making life as easy as we can for ourselves. This recipe is the perfect place to start. It is easy and fast to make. It's full of vital nutrients and protein but the taste is so satisfying you wouldn't think it was anything but a lovely little indulgence of pure pleasure. Try to use a brand of peanut butter whose only ingredient is peanuts. You can easily substitute the peanut butter for almond butter if you prefer. You can use regular oats if the gluten free version isn't something you need. Use your imagination to pick and choose the ingredients that are right for you. Chocolate & Peanut Butter Bites

Ingredients:
7-8 medjool dates
70 g (1/3 cup) peanut butter
100 g (1 cup) gluten free oats
3 Tbsp cacao powder
1 Tbsp chia seeds
1/4-1/2 tsp salt (to taste)
2 Tbsp cacao nibs (optional)
Instructions:
In a food processor, blitz together the peanut butter and dates until it forms a chunky paste.
Add in the oats, cacao powder, chia seeds, and salt. Blitz until well blended and the mixture has a slightly sticky consistency which you can form into balls.
If the mixture is too dry, add one teaspoon of water and blitz again. Repeat this step if you need to, but don't make them too sticky or the mix will become too mushy to roll into balls.
Finally, add in the cacao nibs and pulse until they are your desired consistency.
Tip the mixture into a bowl and use your hands to roll them into bite size balls. This recipe should make between 15-20 depending on how big you want them.
Store the Chocolate & Peanut Butter Bites in an airtight container in the refrigerator for up to two weeks.
Alternatively, you can make them in bulk batches and freeze for up to 3 months.
